A rare moment in time bringing together new and old, heritage and craft.
Before he was chef-patron of Singapore's three-Michelin-starred Odette and a World's 50 Best chef's choice award winner, Julien Royer was a son and brother in a fourth-generation farming family in France's Auvergne region. For his hotly anticipated Pair'd debut, Royer is revisiting his agrarian heritage and cooking at an exclusive wine dinner at Vasse Felix, the birthplace of Margaret River wine.
Together with Odette's award-winning Wine Director Vincent Tan, Royer teams up with Vasse Felix Head Chef Cam Jones and Head Winemaker Virginia Willcox to serve an exclusive one-night-only wine dinner reimagined with pristine local ingredients through Odette's globally informed French-Asian lens.
On the night, expect live music and canapés before moving onto a refined four-course dinner thoughtfully paired with rare, impossible-to-find museum wines straight out of the Vasse Felix cellars. Respected wine journalist Erin Larkin will host the night and share insights into the story of Vasse Felix and the importance of looking after and respecting a place's terroir.
